Sauerkraut Salad

My Mother, whose wonderful cooking was an inspiration to me and brought such enjoyment to all who visited her home. I treasure all that she taught me."


1 quart sauerkraut
1 small onion chopped
1 green pepper, cored and chopped
1 cup celery chopped
2/3 cup white vinegar
1/3 cup water
1 cup sugar


Drain and wash sauerkraut under cold water; squeeze and pull apart and rinse until all of the canned water is out. Mix together all of the other ingredients. Chill 24 hours or overnight. Keep in glass container in refrigerator until ready to serve
