Couscous, Green Lentils, Chicken, Fresh Herbs, Tomato & Feta
1 cup Israeli couscous
1/2 cup green lentils
the juice of two lemons
2T lemon juice
1 T garlic
1 small shallot
1/4 cup fresh parsley
1/4 cup fresh cilantro
1/2 cup feta
1 cup cut up chicken.
Cook the couscous and the lentils separately. When they are cool add them to the chopped up shallots, tomato, herbs, chicken and feta. The rest of the ingredients are the dressing: lemon, olive oil, and shallots. You can improvise ingredients based on what is fresh and in your kitchen.
