Seafood macaroni salad

A light and tasty seafood macaroni salad."


2 cups small macaroni shells
8 oz imitation crab meat
1/4 cup green bell pepper finely chopped
1/4 cup yellow bell pepper finely chopped
1/4 cup red bell pepper finely chopped
1/4 cup mild onion finely chopped
1 garlic clove grated

1/2 to 2/3 cup Mayonnaise - according to taste
1/4 cup sour cream
1/4 cup grated Parmesan cheese
1/2 to 1 teaspoon Dijon mustard - according to taste
1 tablespoon lemon juice
1/4 old bay seasoning


Cook macaroni according to package and drain.

Add pepper(s), onion and imitation crab meat. Mix well

In a separate bowl mix mayo, sour cream, lemon juice, Parmesan cheese, Dijon mustard, old bay seasoning, and grated garlic. Mix well.

Add salt & pepper to taste.

Cool thoroughly and enjoy.
