This recipe is great for entertaining.

Function: Small Grains

Ingredients

1 cooker cup bulgur wheat


1 cup water


2 cups fresh parsley, chopped


½ cup fresh mint, chopped


2 cups halved grape or cherry tomatoes


3 green onions, thinly sliced


2 tablespoons extra virgin olive oil


¼ cup fresh lemon juice


¼ teaspoon kosher salt


¼ teaspoon freshly ground black pepper


Pinch ground cumin

Instructions

1. Put the bulgur and water in the cooking pot of the Cuisinart ® Rice and Grain Multicooker.  Select the Small Grains function and press Start/Stop.


2. Once the audible tone has sounded to indicate the end of cooking, open the lid and add the remaining ingredients; toss to combine.


3. Taste and adjust seasoning and serve immediately.
