Ingredients
- 1garlic clove
- 1–2jalapeños, cored, seeded
- and quartered
- 1small onion (red or white, about
- 2 ounces), peeled, cut into
- ½ -inch pieces
- ½cup packed fresh cilantro leaves
- 2pounds ripe red tomatoes, cored,
- seeded and cut into 1-inch pieces
- 1teaspoon kosher salt
- 1teaspoon ground cumin
- ½teaspoon ground coriander
- 2tablespoons fresh lime juice
Preparation
- 1. Put all of the ingredients, in the order listed, into the blender jar fitted with the blending blade.
- 2. Pulse until desired consistency is achieved.
- 3. Pour over hot pasta, or serve with crusty bread as a fresh topping.
