Ingredients
- 1 garlic clove
- 1 small shallot, cut into ½-inch pieces
- 1 tablespoon Dijon-style mustard
- ¼teaspoon kosher or sea salt
- pinch freshly ground black pepper
- 2½tablespoons champagne vinegar
¾cup extra virgin olive oil
Preparation
- 1.Put all ingredients in the blending cup except for the olive oil. Process to break up the garlic and shallot. Add oil, ¼ cup at a time, and blend until emulsified.
- 2.Let mixture blend an additional 30 seconds after all ingredients have been added.
