This delicious vinaigrette will become a favorite after the first taste.

Ingredients

  • 1 garlic clove
  • 1 small shallot, cut into ½-inch pieces
  • 1 tablespoon Dijon-style mustard
  • ¼teaspoon kosher or sea salt
  • pinch freshly ground black pepper
  • 2½tablespoons champagne vinegar
    ¾cup extra virgin olive oil

Preparation

  1. 1.Put all ingredients in the blending cup except for the olive oil. Process to break up the garlic and shallot. Add oil, ¼ cup at a time, and blend until emulsified.
  2. 2.Let mixture blend an additional 30 seconds after all ingredients have been added.
