Ingredients
- 1 large ripe avocado
- 2 tablespoons fresh lemon juice
- ½ cup mayonnaise, reduced fat
- ½ cup sour cream½cup buttermilk
- ¼ cup chopped parsley
- 1 tablespoon chopped mint
- 1 tablespoon chopped dill
- 3 small green onions, chopped
- ¼ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
Preparation
- Scoop avocado into a medium mixing bowl.
- Insert the mixing beaters into the Cuisinart® Hand Mixer. Mix on speed 1 and slowly increase to speed 3 to mash.
- Once mashed, add the remaining ingredients in order listed beginning with the lemon juice and finishing with the spices. Dressing should be smooth and creamy.
- Taste and adjust seasoning accordingly.
