Charred Strawberry Vinaigrette

This dressing adds flair to simple mixed greens, is a light marinade for fish, and can also be used as a dipping sauce for egg rolls or fried seafood.

Ingredients

1 1⁄3cups vegetable oil, divided4cups hulled and halved strawberries10large basil leaves1teaspoon ground cumin2teaspoons sea salt1teaspoon freshly ground black pepper3tablespoons white balsamic vinegar

Preparation

Put ½ teaspoon of the oil into a small sauté pan set over high heat. Once the oil begins to smoke, add the strawberries. Brown evenly on all sides. Remove and put into the jar of your Cuisinart® PowerEdge® 1000 Watt Blender. Auto Pulse on Low for 10 seconds or until roughly chopped; scrape sides of jar. Add the basil, cumin, salt, pepper and vinegar; run on High and blend for 20 seconds. While running, add the remaining oil and let blend for 25 seconds.
