Ingredients

¼ cup unsalted butter4tablespoons unbleached, all-purpose flour3cup whole milk¼teaspoon kosher saltpinch white pepperpinch freshly ground nutmeg

Preparation

Place butter in a 1½ quart microwave safe casserole. Place in Cuisinart® Convection Microwave Oven with Grill and microwave on half power (PL 5) for 45 seconds, microwave in 10-second intervals on half power until butter is melted. Stir in the flour with a whisk and microwave again on 60% power (PL 6) for 1 minute. Whisk in milk and microwave on full power (PL 10) for 5 minutes; whisk mixture well, being sure to get into the corners. Repeat 2 more times, whisking well each time until mixture has thickened considerably. Once sauce is thick, stir in the salt, white pepper and nutmeg.
