1 garlic clove
1 small shallot, cut into ½-inch pieces
1 tablespoon Dijon-style mustard
¼ teaspoon kosher or sea salt
pinch freshly ground black pepper
2½ tablespoons champagne vinegar
¾ cup extra virgin olive oil

1. Put all ingredients in the blending cup except for the olive oil. Process to break up the garlic and shallot. Add oil, ¼ cup at a time, and blend until emulsified.
2. Let mixture blend an additional 30 seconds after all ingredients have been added.
