Spicy Olive Tomato Sauce

Spicy Tomato Sauce over Penne




2 med onions chopped 2 cloves garlic chopped 1 large can crushed tomato 1 teaspoon crushed red pepper flakes ½ teaspoon black pepper 1 T dried oregano 1 sm can of anchovies (chopped) 1 can black olives (drained) coarsely chopped 1 sm jar of drained green olives coarsely chopped 2 T large capers coarsely chopped hand full chopped fresh italian parsley 3 T EVOO 1 lb uncooked penne.

Boil penne per package instructions. In a large saute pan place the 3T evoo and heat over med high. Add chopped onions and chopped garlic, saute until soft about 5 minutes stirring occasionally. Reduce heat to medium and add crushed tomatoes, crushed red pepper flakes, black pepper, and oregano. Simmer for 5 minutes. Add anchovies, black and green olives and capers. Simmer for additional 10 minutes. Serve over penne garnish with parsley and fresh grated Romano cheese.
