I started toying with this recipe to use organic blueberries from our friends' farm. It has morphed over the years and I think it is good now. Enjoy!
2 pints blueberries
2/3 cup honey
1/2 cup ketchup
1 jalapeño pepper, seeded/minced
2 Tbsps red wine vinegar
1/2 cup finely chopped shallots
1 1/2 Tbsps grated fresh ginger
1/2 cup molasses
2 Tbsps fresh lime juice
Zest of 1 lime (4 limes)
1/2 teaspoon dry mustard
Liquid Smoke to taste

Combine ingredients in a medium saucepan. Bring to a boil over medium heat; reduce heat and simmer until thickened, about 1 1/2 hours. Blend well hand immersion blender. Strain if desired. Use a glaze while cooking and also have a cup sitting on the table!! Can be canned like jam! Can be used on pizza instead of pizza sauce!
