Pesto - 4 Servings

Pesto a la Maria Rosenberg Best if used quickly and not refrigerated. Can be used as a wonderful sauce for al dente linguini. Can also be a great appetizer. Serve as a dip with tostitos. The recipe can be doubled to serve a large crowd of guests.




1 cup fresh basil 1 cup fresh parsley 1 clove garlic ½ cup extra virgin olive oil or more 1 cup freshly grated Parmesan cheese ½ cup pignolia nuts or more salt and pepper to taste

Chop basil and parsley Mince garlic Combine all three ingredients and add Parmesan cheese and pignolia nuts Add extra virgin olive oil as needed and mix thoroughly Add salt and pepper liberally to taste Cover and store at room temperature. Best if used quickly and not refrigerated
