Homemade dressings are much healthier and taste better than store bought. This particular recipe uses whole blueberries, fresh oregano, grainy mustard and a variety of vinegars/oils to create a unique dressing that serves well over a variety of dishes. Keep the extra in a jar in the fridge and enjoy it for days!

¾ cup fresh blueberries
¼ cup olive oil
¼ cup balsamic vinegar
¼ cup brown rice vinegar
10 fresh oregano leaves
1 teaspoon grainy mustard
Ground black pepper and a pinch of kosher sea salt

Instructions
Place all of the ingredients in your Cuisinart mini-food processor and blend until smooth. You'll notice that the dressing will get creamy from the blended, fresh blueberries.
Pour the dressing into a jar and chill in the refrigerator for about an hour. Serve over mixed greens with whole blueberries, toasted nuts and some pan-seared fish.
