Cranberry Fluff

A very festive, colorful salad that can be made either "quite healthy" by skipping the marshmallows and the cream or really decadent by including one or both of them.




2 C fresh ground cranberries (1 - 12 oz bag is enough), washed. Not frozen ¾ C. sugar Optional: 3 C tiny marshmallows 2 C diced tart apples (bitesize - not peeled) 20 oz can unsweetened pineapple chunks, drained Optional: ½ C chopped nuts (walnuts or pecans or hazelnuts) Optional: 1 C. heavy cream, whipped

Nutritional information

Vitamin C, fiber, relatively high carbs due to the sugar . Low fat if you skip the whipped cream.


The night before the meal, grind the cranberries in a blender or mini-prep food processor. Do this in small batches to get an even grind. Combine with sugar and marshmallows (if using) and cover with plastic wrap. Chill. The day of the meal,fold in the apples, pineapple and nuts (if using). Fold in the whipped cream (if using).
