Swiss Chard & Veggie Bacon Panini

Ingredients

• 1/2 Yellow Onion-sliced thin
• 1 Bunch Swiss Chard-washed
• 6 Slices Veggie Bacon-like Morningstar Farms brand; thawed
• 8 Slices Multigrain Bread
• 4 Slices Asiago Cheese
• Coarse Grain Mustard-like Sir Kensington brand
• Whole Butter-as needed
• Salt & Pepper-as needed

Instructions

1. Roughly chop the washed Swiss Chard
2. Slice the thawed veggie bacon into lardons
3. Heat a saute pan over medium heat and sweat the yellow onion in a little olive oil
4. Add the Swiss chard and bacon pieces & cook until the greens are wilted; season everything with salt and pepper
5. Set aside the greens mixture to cool
6. Preheat Cuisinart™ Griddler in the closed grill position to 375°F.
7. Butter each slice of bread and lay down on this side to build sandwich
8. Spread the mustard on each slice of bread
9. Divide the greens between four slices of the prepared bread
10. Add 1 slice of Asiago cheese to the top of the Swiss chard mixture
11. Top each sandwich with 1 slice of remaining prepared bread
12. Place the sandwiches on the preheated Griddler. Cover, press lightly for 30 seconds and bake for 3 to 4 minutes until bread is grill marked and crispy and cheese is melted. Serve hot.
