Sunrise Surprise

I'm a fan of big breakfasts, but some days, I just need something quick, light, and healthy. You can't go wrong with an egg on an English muffin, and a few quick additions can make a boring breakfast into something bright, filling, and delicious.




• 1 whole grain English muffin, sliced
• 1 egg
• 1 turkey sausage patty
• ¼ cup baby spinach, washed
• ¼ teaspoon raspberry preserves
• 1 TSP butter
• Salt and pepper to taste

1. Preheat griddle to medium-high, add butter as needed
2. Cook sausage on griddle for 7 minutes per side
3. Lower heat to medium
4. Crack egg onto griddle and cook 3 minutes, cover with glass lid if you like it less runny
5. Lightly butter both sides of the English muffin and toast on the griddle for 30 seconds each
6. Layer spinach, turkey sausage and egg on English muffin base
7. Add a pinch of salt and pepper, then top with preserves and remaining slice of English muffin
