Grilled Mozzarella, Tomato, and Pesto Sandwiches

Ingredients

  • 4teaspoons prepared pesto
  • 4slices country white, sliced sandwich bread
  • 4ounces sliced, low-moisture mozzarella
  • 6/8 grape tomatoes, halved
  • melted butter or olive oil for brushing

Preparation

  1. Spread 1 teaspoon of pesto on each of the 4
  2. slices of bread, leaving at least a ½-inch border
  3. around the edges. Divide the mozzarella between
  4. two of the bread slices, making sure to keep the
  5. border. Layer with 3 or 4 grape tomato halves
  6. and top with the remaining two bread slices,
  7. pesto side down.
  8. Preheat the Cuisinart® Sandwich Maker. Lightly
  9. brush plates with melted butter or oil. Carefully
  10. place the assembled sandwiches onto the
  11. preheated Sandwich Maker. Use firm pressure
  12. to close lid; lock and cook. Green indicator light
  13. will go off and red light will come on (this may
  14. not happen immediately). When green indicator
  15. light reappears, sandwich is cooked. Add 15 to
  16. 30 seconds additional cooking time if a toastier
  17. sandwich is preferred. Remove with a heatproof
  18. silicone spatula. Allow sandwich to cool slightly
  19. for 2 to 3 minutes before serving, as filling will be
  20. very hot.
