This sandwich is brimming with fresh ingredients and can be made as an all veggie meal or with a meat protein as well! My all time favorite for any meal of the day!
6 cloves garlic, peeled
1 15 oz. can chickpeas, rinsed and drained
1½ c. fresh parsley leaves, tightly packed
1 c. fresh cilantro leaves, tightly packed
½ c. diced onion
⅓ c. flour or flour subsitute
1 T. fresh lemon juice
1½ teaspoon baking powder
1½ teaspoon salt
1½ teaspoon cumin
½ teaspoon black pepper
4-5 T. grapeseed oil, or other oil of choice
Best served with: pita or naan bread, fresh greens, sliced onion, diced tomatoes, tzatziki, grilled meat choice, or hummus

1. Add garlic,chickpeas, cilantro, parsley, onion, flour, lemon juice, baking powder, salt, cumin & black pepper to a food processor. Pulse until smooth and mixed
2. Transfer to a bowl and cover with plastic wrap so wrap is touching top of mixture. Refrigerate 1-2hours until chilled
3. Roll 2 T of mixture into a ball, place on parchment paper and flatten slightly to a ½" thicknes
4.Heat oil in skillet or cast iron skillet over med-high heat. Add falafel disks to oil and fry 2-3 min. per side, until browned. Transfer to a plate lined with paper towel.
5. In your bread choice, layer your falafels, greens, oinions, tomatoes, tzatziki and grilled meat or hummus. AMAZING!!!
