Chicken Cobb Salad Sandwich

Its all the comforts of a cobb salad in a handheld form. Makes for a great outside meal at lunch or dinner. Enjoy!

Ingredients

• 1 medium chicken breast
• 4 slices cooked bacon(thick cut)
• 1/4 cup crumbled blue cheese(good quality)
• 4 slices of sandwich bread of choice(I prefer sour dough)
• 4 slices of ripe tomatoes
• 1/3 cup smashed avocado
• 3 hardboiled eggs
• 1 tablespoon balsamic
• 1 tablespoon olive oil
• salt and pepper to taste
• 1 1/2 tablespoons mayo
• 2 large romaine leaves

Instructions

1. Thinly slice chicken breast into thin cutlets
2. Mix balsamic, oil and salt and pepper and marinate chicken(atleast 1 hr)
3. Finely Chop egg and mix with mayo and salt and pepper
4. Mix blue cheese and avocado and salt and pepper
5. Grill chicken breast
6. Toast Bread
7. Assemble sandwich: on one side of toast spread egg, on the other spread avocado blue cheese. Top with chicken, bacon, lettuce and tomato. Enjoy!
