Bombay Grilled Cheese Sandwich

This is an easy way to make a good old grilled cheese sandwich more interesting. You can control the spice by using a hot or sweet chutney.




• 2 slices challah (or other egg bread)
• 2 slices sharp Cheddar cheese
• About 2 Tablespoons Sweet Unsalted Butter, softened
• About 3 Tablespoons Chutney - your own or bottled

1. Heat a griddle to medium hot
2. Butter one side of each slice of bread
3. Put cheddar cheese on the unbuttered side of one slice of bread
4. Spread Chutney evenly over cheese, top with the second slice of bread, buttered side out
5. Place sandwich on griddle, weight down with a plate or sandwich press
6. When bottom piece of bread is lightly brown, flip the sandwich over
7. Cook until the second slice of bread is browned and cheese is melted
