BLT 2.0

This healthy twist on a classic BLT is actually much more filling and satisfying than the original. Using a hearty multi-grain bread, thick-cut turkey bacon, heirloom tomatoes, and plenty of spinach gives the sandwich substance, while a thin layer of zesty guacamole adds a lot of flavor.




• 8 slices hearty, multi-grain bread
• 8 slices thick-cut turkey bacon
• 1 cup baby spinach, washed
• 1 heirloom tomato, sliced
• 1-2 medium avocados
• 1 medium red onion, diced
• 1 TSP lemon juice
• small bunch cilantro, chopped
• ½ teaspoon red pepper flakes
• ¼ teaspoon garlic salt
• ¼ teaspoon salt
• 2 TSP butter

1. Preheat grill and griddle to medium heat
2. Lightly butter grill/griddle and both sides of bread slices
3. Lightly toast bread on griddle, flipping after a few minutes
4. Cook bacon on griddle for 8 minutes, flipping regularly
5. Halve avocado and mash in a medium bowl
6. Add onion, lemon juice, cilantro, and seasonings to bowl, mix until combined
7. Layer 4 slices of bread with a bed of baby spinach
8. Add 2 slices of turkey bacon to each
9. Add 1-2 slices of tomato, cover with a thin spread of guacamole
10. Add a pinch of salt and pepper, squeeze a few drops of lemon juice, and the second slice of bread to each sandwich
