• 1 avocado
• 2 slices whole grain bread, toasted
• 1 carrot, shaved
• fistful of pepperocini, patted dry
• dijon mustard
• a sprinkling of your favorite salt (sea, kosher, maldon)

Instructions
1. Spread mustard over both slices of toasted bread
2. Spread avocado equally over each piece of bread
3. Press pepperocini into avocado on one slice
4. Sprinkle with salt
5. Lay carrot shavings over pepperocini
6. Close sandwich, compress slightly, and cut in two
