Tina's Yummy Pasta

A light and flavorful pasta dish.




4 cups of any type of noodle pasta. Like Rigatoni. 6 cloves of garlic ¼ cup Virgin olive oil 1 teaspoon Red Pepper flakes 1 teaspoon Kosher Salt 1 teaspoon Pepper 2 Tomatoes chopped ¼ cup grated mozzarella cheese ½ cup Goat cheese (can substitute other light cheeses) 2 tablespoons red wine or white wine vinegar ¼ cup more Virgin Olive Oil

Boil pasta as directed. Heat olive oil. Chop garlic add to hot olive oil. Do not burn the garlic. Chop tomatoes and put in bowl. When olive oil and garlic mixture is done pour over tomatoes and toss. Add salt, pepper and pepper flakes and toss. Add vinegar and toss. When noodles are done drain, do not rinse. After drained add to tomato mixture. Toss. Add grated cheese and the ¼ cup olive oil and toss. Let stand for 5 minutes to soak up flavor. Then add the ½ cup goat cheese cubed and toss. Put in fridge for 10 minutes to cool a bit. Can server warm but sitting allows flavors to mix throughout. This is also great to make the day before eating and serve the next day. The flavors are tremendous in this mix.
