Spinach Pasta Dough

  • 8 ounces fresh spinach leaves
  • 1¾ cups unbleached, all-purpose flour
  • ¾ cup semolina flour
  • 2½ teaspoons kosher salt

  1. Insert the large metal chopping blade into the large work bowl of the Cuisinart® Food Processor. Fill the bowl with half of the spinach. Pulse 10 times and then process until finely chopped. Add remaining spinach and repeat, scraping the bowl in between. Add both flours and salt to work bowl and pulse 5 to 6 times to combine. Process ingredients until a dough ball forms. Once dough ball forms, allow machine to run for 30 seconds to knead. Divide dough into 4 equal parts and pass through a pasta roller machine.
