Cook pasta follow instructions on the pack reduce cooking time by 3 minutes so pasta is partly cooked, drain and rinse with cold water, leave to drain. Chop the gingers and crush the garlic and leave to rest for later.
Meanwhile, fry chopped onions in 2 tablespoons of oil until they start to clear and become slightly caramelized. To prevent onions from burning, add a few tablespoons of water after a few minutes.
Add chopped mushrooms to onios and stir fry for a further few minutes add ground turkey fry until turkey starts to brown add chopped peppers stir for a further few minutes, add chopped ginger and garlic and fry for a further 2 minutes, add can of tomatoes and 1 tablespoon of tomato paste and Italian sesoning and bay leaves, allow it to simmer for 20 minutes. Meanwhile, add olive oil to cold pasta with remaining tomato paste and mix gently the basil oregano chili flakes and remaining Italian seasoning.
Add 2 table spoons of cooking oil to the bottom of a large non stick pan, add a layer of the pasta mix, and then a layer of meat sauce mix until you have used all the pasta and meat sauce. Add 1/2 cup of water cover the pan and cook on a low heat for at least 45 minutes. when ready to serve the bottom of the pan will have a layer of crispy pasta which is very tasty, serve with garlic bread and red wine, you can adjust how much chili or ginger to the recipe depending how spicy hot you like it.
