Ingredients
- 2 teaspoons extra virgin olive oil
- ½ pound fresh Italian sausage, hot, casings removed
- ½ pound fresh Italian sausage, sweet, casings removed
- 2 garlic cloves, smashed
- 1 pound medium-sized pasta, such as orecchiette
- 1 large bunch broccoli rabe, stems and leaves separated
- 2¼ cups water
- ¼ cup grated Parmesan
Preparation
- 1. Heat the oil in the CuisinartPressure Cooker over medium-high heat.Once the oil is hot, add the sausage and garlic. Using a wooden spoon, break up the sausage in the pressure cooker. Cook until sausage is browned with no pink remaining.
- 2. While the sausage is browning, cut the broccoli rabe stems into 1-inch pieces. Cut the leaves into 2-inch pieces. Reserve.
- 3. Once the sausage is cooked, stir in the pasta, broccoli rabe stems and leaves, and water.Secure the lid and select High pressure. Turn the heat to high until the pressure cooker reaches full pressure. Reduce temperature to maintain pressure* and set a timer for 8 minutes.
- 4. When time expires, remove pressure cooker from heat and release pressure by selecting quick pressure release. When the red safety valve drops, remove lid and stir in cheese.Serve immediately.
- * Unit reaches full pressure when red safety valve pops up and steam releases continuously from the pressure release valve. Regulate pressure by reducing temperature to medium/medium-low to maintain full pressure. There should be slight steam and consistent hissing from the pressure release valve.
- Keep a close eye on the pressure cooker when cooking. Some adjustment of temperature may be necessary to maintain pressure.
