This recipe is so easy and no cooking involved for the sauce for the pasta. It is a huge hit every time I make it.
4 main course, 6 first course servings
1 teaspoon balsamic vinegar
¼ c. olive oil
2 cloves crushed garlic
pinch of cayenne pepper
salt & pepper to taste
1 lb. penne or ziti pasta
½ lb. fresh mozzarella cheese, cut in small dice
1 lg C. of diced tomatoes, drained
15 fresh basil leaves shredded

Drain tomatoes, when they are completely drained, combine tomatoes with olive oil, vinegar, garlic, salt, pepper and cayenne.
Let stand for 20 min at room temp.
Meanwhile, bring lg. pot of water to boil, salt water, boil pasta, drain. Add pasta to tomato mixture and toss, add diced mozzarella and basil, toss gently. The heat from the pasta will start to melt the cheese. Serve hot or room temp. Awesome!
