Chicken Pesto Pasta

A pasta dish, with a creamy, but light sauce. You don't need a salad with this dish, since there is spinach in it already!




1 package penne pasta 2 tablespoon olive oil 2 tablespoon butter 4 skinless and boneless chicken breasts 2 garlic cloves, minced salt and pepper ¾ cup heavy cream ½ cup chicken broth ¼ cup pesto 3 T. grated Parmesan (optional) ¼ cup sun dried tomatoes, cut into thin strips 1 large package fresh baby spinach

Cook penne pasta, al dente. Sprinkle chicken breasts with salt and pepper. In a large skillet, heat the oil and butter, and saute the chicken breasts with the garlic, until the chicken breasts are cooked. Remove chicken to a plate, and cut into strips. Reduce heat, stir in all remaining ingredients EXCEPT spinach. Cook until sauce begins to thicken. Return cooked chicken and pasta to pan, and heat through. Place uncooked spinach in the bottom of a large bowl, and pour pasta mixture over spinach, toss and serve. Options: You can saute mushrooms in the pan, after removing the chicken, and then continue with the recipe.
