Cajun Chicken Pasta

Wonderful pasta dish- as good as eating out at a great restaurant, but you made it yourself. Rich, creamy and filling!




4 ounces linguine pasta 2 skinless, boneless chicken breast halves 2 t. Cajun seasoning (recipe below) 2 T. olive oil ½ green pepper, sliced 1 can mushroom slices, drained 1 green onion, chopped 1 cup heavy cream ¼ t. dried basil ¼ t. lemon pepper ¼ t. salt ⅛ t. garlic powder ⅛ t. black pepper ¼ cup Parmesan cheese (garnish) Cajun Seasoning : 4 t. salt 4 t. paprika 3 t. garlic powder 3 t. black pepper 2 ½ t. onion powder 1 ½ t. thyme 1 ½ t. cayenne pepper 1 ½ t. oregano

Cook pasta in salted water till al dente; drain and set aside. Cut chicken into tenders and place in plastic bag with Cajun seasoning to coat. In a large skillet, sauté the chicken in olive oil till almost tender. Remove chicken and add the bell pepper, mushrooms, and green onion. Sauté for 2 to 3 minutes. Reduce heat. Add the cream, basil, lemon pepper, salt, garlic powder and black pepper. Return chicken to pan and cook to heat through. Add the cooked linguine and toss well. Serve and garnish with Parmesan cheese.
