Penne with Sun-Dried Tomatoes & LemonUser Submitted Recipe
3 tablespoons olive oil
3 rashers bacon,chopped
1 onion chopped
1/3 cup lemon juice
1 T fresh thyme leaves
1/3 cup chopped sun-dried tomatoes
1/2 cup pine nuts, toasted
1) Cook the pasta in a large pan of rapidly boiling salted water until al dente. Drain well and return to the pan to keep warm.
2) Heat the oil in a large pan. Add the bacon and onion and stir over medium heat for 4 minutes or until the bacon is brown and the onion has softened. Add the pasta, lemon juice, thyme, tomatoes and pine nuts. stir over low heat for 2 minutes to heat through.
note: Sun dried tomatoes will become bitter if heated too much. Variation: use pancetta instead of bacon if preferred.
