Whole Smoked Filet Mignon
Whole Smoked Filet Mignon
Perfectly cooked beef tenderloin. Smoked to rare and then charred over open coals
either whole or individual steaks.
Ingredients
- 1 whole beef tenderloin (filet mignon) roast
- 3 tablespoons kosher salt
- 1 tablespoon cracked black pepper
- 1 tablespoon olive oil
Preparation
- 1. Pre-heat Cuisinart Woodcreek 4-in-1 Pellet Grill to 220°F.
- 2. Clean tenderloin.
- 3. Place tenderloin on a sheet pan.
- 4. Season generously with salt and pepper.
- 5. Drizzle with olive oil.
- 6. Truss with butcher twine
- 7. Place trussed roast on Woodcreek pellet grill.
- 8. Insert probes into the thickest part of the roast.
- 9. Cook to an internal temperature of 110°F.
- 10. Set aside to rest for 5 minutes.
- 11. Insert charcoal insert and fill with lump charcoal.
- 12. Increase temperature to SEAR.
- 13. Slice tenderloin into individual steaks or sear whole.
- 14. Sear roast or steaks over charcoals to the desired temperature.
