Ingredients

5 Portobello Mushrooms¾ Cup Marinara Sauce6 0z Fresh Mozzarella, sliced¼ Cup Grated Parmesan Cheese½ Teaspoon Red Crushed Red Pepper½ Cup Fresh Basil Leaves2 Tablespoons Extra Virgin Olive Oil

Preparation

1. Remove stems from portobello and using a spoon scrape out all dark gills. Be careful not to break the edge of the portobello. Its cup shape will help container toppings.2. Place portobellos on a sheet pan cup side up and evenly distribute the marinara on to each. Spread out to the edges of the portobellos. Next top each with mozzarella, grated parmesan and crushed red pepper.3. Heat your grill to, medium high heat. Once hot place portobellos onto grill and cover. Cook until edges of portobellos are deep golden brown and dark and cheese has melted and beginning to brown about 8-12 minutes.4. Remove from grill and place onto a serving plated sprinkle tops evenly with basil leaves and drizzle with extra virgin olive oil. Serve immediately.
