Huevos Rancheros Breakfast Bowl

This is our take on the classic breakfast created by the Mexican farming community. We created a hearty bowl with bright, fresh ingredients to break the fast with your family.

Ingredients

  • 4 each Flour tortillas
  • 2 cupsButternut squash, large diced
  • 1 Zucchini, thick cut rounds
  • 1Summer squash, thick cut rounds
  • 1 tablespoonOlive oil
  • 3 tablespoonsCuisinart Nashville Hot Seasoning
  • 6 slicesBacon
  • 1 can Black beans, drained
  • 1 can Pinto beans, drained
  • 2 Avocados, diced
  • 1 tablespoonLime juice
  • 6 Eggs
  • 1 cup Pico de gallo or salsa*
  • ¼ cupChopped cilantro
  • 2 ouncesQueso fresco, crumbled

Preparation

  1. Set 3-in-1 Pizza Oven Plus on high in grill mode
  2. Once re-heated, grill tortillas to warm and hold in aluminum foil
  3. In a large bowl combine butternut squash, zucchini, and summer squash with Nashville Hot Seasoning
  4. Toss until coated
  5. Grill over medium heat until soft in middle and set aside
  6. Switch grill for griddle and pre-heat on high
  7. Griddle bacon until crispy, remove and rough chop
  8. Heat beans in bacon fat and top with avocado and a squeeze of lime juice
  9. Wipe griddle and add Cuisinart egg ring
  10. Coat with non-stick spray and griddle 6 eggs
  11. In 2 large bowls, place ingredients in sections including pico de gallo and top each with 3 griddled eggs
  12. Garnish with fresh cilantro and queso fresco
