Huevos Rancheros Breakfast Bowl

This is our take on the classic breakfast created by the Mexican farming community. We created a hearty bowl with bright, fresh ingredients to break the fast with your family.
Ingredients
- 4 each Flour tortillas
- 2 cupsButternut squash, large diced
- 1 Zucchini, thick cut rounds
- 1Summer squash, thick cut rounds
- 1 tablespoonOlive oil
- 3 tablespoonsCuisinart Nashville Hot Seasoning
- 6 slicesBacon
- 1 can Black beans, drained
- 1 can Pinto beans, drained
- 2 Avocados, diced
- 1 tablespoonLime juice
- 6 Eggs
- 1 cup Pico de gallo or salsa*
- ¼ cupChopped cilantro
- 2 ouncesQueso fresco, crumbled
Preparation
- Set 3-in-1 Pizza Oven Plus on high in grill mode
- Once re-heated, grill tortillas to warm and hold in aluminum foil
- In a large bowl combine butternut squash, zucchini, and summer squash with Nashville Hot Seasoning
- Toss until coated
- Grill over medium heat until soft in middle and set aside
- Switch grill for griddle and pre-heat on high
- Griddle bacon until crispy, remove and rough chop
- Heat beans in bacon fat and top with avocado and a squeeze of lime juice
- Wipe griddle and add Cuisinart egg ring
- Coat with non-stick spray and griddle 6 eggs
- In 2 large bowls, place ingredients in sections including pico de gallo and top each with 3 griddled eggs
- Garnish with fresh cilantro and queso fresco
