Grilled Chicken Breast
Classic grilled chicken is a cornerstone to any cookout. A simple brine keeps the breast moist inside, while helping to create a charred exterior.
Ingredients
- 3-4 10-ounce boneless skinless chicken breast
- 6 cups Basic Brine (see recipe)
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon crushed black pepper
Preparation
- In a large bowl or freezer bag, cover chicken breast with brine and refridgerate overnight.
- Remove chicken from brine and pat dry with a paper towel.
- In a medium bowl add chicken, oil salt, and pepper. Toss to coat chicken breast.
- Preheat rill on HIGH with lid closed for 5-minutes.
- Place chicken breast on pre-heated grill directly above burners and close lid
- After 5 minutes, flip chicken and cook an additional 5-minutes
- Continue turning chicken every 5 minutes (at 45° angle for perfect grill marks) until internal temperature reaches 165F. If chicken is becoming too dark, set grill to LOW or place chicken on top rack.
- Once fully cooked, let chicken rest for at least 5 minutes before slicing.
