Whole Smoked Filet Mignon

1 whole beef tenderloin (filet mignon) roast
3 tablespoons kosher salt
1 tablespoon cracked black pepper
1 tablespoon olive oil

1. Pre-heat Cuisinart Woodcreek 4-in-1 Pellet Grill to 220°F.
2. Clean tenderloin.
3. Place tenderloin on a sheet pan.
4. Season generously with salt and pepper.
5. Drizzle with olive oil.
6. Truss with butcher twine
7. Place trussed roast on Woodcreek pellet grill.
8. Insert probes into the thickest part of the roast.
9. Cook to an internal temperature of 110°F.
10. Set aside to rest for 5 minutes.
11. Insert charcoal insert and fill with lump charcoal.
12. Increase temperature to SEAR.
13. Slice tenderloin into individual steaks or sear whole.
14. Sear roast or steaks over charcoals to the desired temperature.
