Turkey Brine

The brine is a great start to a perfect turkey. Using ice speeds up the cooling process.

Yields

10-12 servings


Ingredients

1 ½ gallons   Water

1 ½ cups       Kosher salt 

1 cup            Maple syrup or Honey 

6                  Garlic cloves, peeled        

6                  Bay leaves

4                  Rosemary sprigs (or 1 tablespoon dried)

4                  Cinnamon sticks

4                  Star anise

1                  Nutmeg

1 tablespoon Black peppercorns

1 tablespoon Cloves

1 teaspoon    Chili flake

½ gallon        Ice

Instructions

  1. Bring ½ gallon of water to a boil
  2. In a large pot or container that can hold Turkey add salt
  3. Pour boiling water over salt and whisk until combined
  4. Whisk in Maple syrup, garlic, herbs, and spices
  5. Whisk in remaining water
  6. Top with ice and continue to whisk, this will rapidly bring the temperature down
  7. Make sure brine is completely cooled before brining turkey
  8. Turkey should cure in brining liquid for 24 hours
