Southern Slaw Dogs
4 Hot dogs
4 Hot dog buns
¼ cup Meat chili*
3 tablespoons Yellow mustard
½ cup Coleslaw**
½ small Onion, finely chopped
For Chili*:
1 tablespoon Olive oil
1 Small white onion, finely diced
3 cloves Garlic, minced
1-pound Ground beef
1 tablespoon Chili powder
1 teaspoon Paprika
½ teaspoon Cumin
½ teaspoon Kosher salt
¼ teaspoon Black pepper
¼ cup Ketchup
2 tablespoons Tomato paste
1 teaspoon Worcestershire sauce
1 cup Water
For Slaw**:
2 tablespoons Brown sugar
1 tablespoon Lemon juice
1 tablespoon Apple cider vinegar
2/3 cup Mayonnaise
16 ounces Coleslaw Mix
2 tablespoons Flat leaf parsley, chopped
For Chili*:
Heat oil in a sauté pan over medium-high heat. Cook onion and garlic until softened. Add ground beef, spices, salt, and pepper. When beef is cooked through, add ketchup, tomato paste, Worcestershire, and water. Cook until liquid is reduced and thickened.
For Slaw**:
In a medium bowl whisk brown sugar, lemon juice, and vinegar until dissolved. Whisk in mayonnaise until combined. Add coleslaw mix and parsley and toss until coated. Rest in the refrigerator for at least one hour.
Preheat grill on high. Reduce to medium and grill hot dogs while warming buns on upper rack. Open hot roll and spoon chili layer across bottom. Top with hot dog, add a little more chili, then drizzle with yellow mustard. Top with coleslaw and garnish with diced onion.
