Easy Salsa for Dipping


makes 3-4 quarts depending on the juiciness of the tomatoes. I have used this recipe to replace 14-12 of the canned tomatoes in other recipes such as Chili and Gumbo.


• 4-6# very ripe tomatoes (Roma work well)
• 1 bell pepper, deveined
• 1 medium onion
• 2 bunch green onions
• 4 raw jalapeno peppers
• 2 serrano peppers (optional) for heat
• ¼ cup pickled jalapeno peppers
• 2 small carrots (optional)
• ⅛ cup sugar
• 1 teaspoon salt (more to taste)
• ½ teaspoon ground pepper (more to taste)
• 4 cloves garlic

1. In shifts, pulse all ingredients in a food processor to the desired chunkiness
2. Once all of the ingredients are processed, stir together in a very large mixing bowl
3. Add more salt and/or pepper to taste, if needed If using to dip chips, do not over salt.
4. If too sweet, add the pickling liquid from the pickled jalapenos as needed for taste (or use fresh lime juice)
5. More Jalapenos can be added to up the heat- or for serious heat, add more serranos
