Tomato Carpaccio with Avocado Chicken Salad

• 1 Ripe Haas avocade
• 1 poached chicken breast, shredded (can substitute 1 can of chicken, well drained)
• ¼ C chopped red onion
• 2 TBS fresh chopped cilantro
• Juice from ½ lime
• salt to taste
• 1 fresh beefsteak tomato, sliced thin

1. Arrange tomato slices in a single layer on a plate and set aside
2. Scoop out avocado and mash in a mixing bowl
3. add onion, cilantro, and lime juice
4. fold in chicken
5. salt to taste (if using canned chicken, you may not need any salt at all)
6. scoop into the center of the tomatoes and eat.
