1 garlic clove
1 can (15.5 ounces ) chickpeas, rinsed and
drained
⅓ cup tahini
⅓ cup plus 2 tablespoons cold water
2 tablespoons fresh lemon juice
½ to ¾ teaspoon kosher salt (to taste)
¼ teaspoon ground cumin
extra virgin olive oil, for finishing
pinch za’atar (optional), for finishing
