Zesty Veal Chops

Easy and fast to prepare."


2 tbsp capers, drained and chopped
1 tbsp chopped fresh parsley
1 tbsp dijon mustard
1 tbsp olive oil
4 veal loin or rib chops, each 3/4 inch thick
Parsley sprigs for garnish
Salad greens (optional)


Preheat broiler. In small bowl, mix capers, chopped parsley, mustard and oil.

Place veal chops on rack in broiling pan. Place pan in broiler at closest position to heat source; broil veal chops 5 minutes. Turn veal chops; spoon caper mixture evenly over chops. Broil 5 to 8 minutes longer for medium, or until desired done-ness. Place veal chops on 4 plates; garnish, and serve with salad greens.
