Sweetest Sweet Potatoes

Mashed Sweet Potatoes with a Pecan Brown Sugar Topping!
This is my family's absolute favorite sweet potato recipe. Even my mother-in-law says their better than her old recipe! They're almost sweet enough to be pie filling, but I haven't tried that out yet. I hope you enjoy them!"

5-7 yams or sweet potatoes
1 cup sugar, or 1/2 cup white and 1/2 cup brown sugar
2 eggs
1/3 cup milk
1 tsp vanilla
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
1/4 tsp cloves
1/4 tsp ginger

1/2 cup brown sugar
1/4 cup flour
1/2 cup chopped pecans
2 Tbsp melted butter

1.) Peel and slice the yams in thin disks... about 1/2" thick.
2.) Boil them in boiling salted water like you would for mashed potatoes.
3.) Once soft enough to mash, drain the sweet potatoes well and turn them into a baking dish (I usually use a dish about 2 1/2 qt).
4.) Mash the sweet potatoes with the sugar, eggs, milk, vanilla, and spices until light and fluffy.
5.) Bake, uncovered, about 20 minutes at 350*.
6.) Meanwhile, mix up the topping by combining the brown sugar, flour, and pecans.
7.) After 20 minutes, take out the sweet potatoes, sprinkle the topping over them, drizzle the melted butter over the topping and pop back into the oven for another 20 minutes.
8.) Serve hot and enjoy! These are also great cold the next day.
