Cranberry Sweet Potatoes

This is a favorite and a tradition at our house and with our extended families and is prepared every Christmas and Thanksgiving. It is delicious, so colorful, and a very pretty dish to serve for the holidays."


5 Large Sweet Potatoes
1 Pkg. Cranberries (fresh)
Brown Sugar
2 tsp. Cinnamon
1 cup chopped walnuts or pecans
Pats of butter
1 cup or more of Orange Juice

1 stick butter
4 T. brown sugar
2 t. cinnamon
1 cup chopped walnuts


Par boil sweet potatoes until almost done. Peel and slice. Place layer of sweet potatoes into casserole dish (9x13).. Dot with pats of butter, sprinkle with brown sugar and layer 1/2 package of cranberries over sweet potato layer... Make another layer of potatoes, butter, brown sugar and the remainder of cranberries.

Bake 350 degrees for 45 minutes
Topping: Melt butter in small sauce pan, add brown sugar, cinnamon and walnuts. Pour over top and return to oven for 10 minutes.

This recipe is enough for 8 – 10 servings or more.

*Note: I have made this using 2 sweet potatoes serving 4 with some leftovers.
