Microwave Caramel Corn


16 C. popped corn (20 C. for lighter coating)
1 stick butter
1/2 C. brown sugar
1/4 C. light Karo syrup
1 tsp. baking soda
1/2 tsp. salt


Place popped corn in a clean brown paper grocery sack; set aside. Combine sugar, butter, corn syrup, and vanilla in large microwave bowl. Microwave for 2 minutes. Stir and continue boiling for 3 minutes, stirring after each minute. Add soda and salt; pour over popcorn and shake. Place entire bag in microwave and cook for 2 minutes, shaking after every 30 seconds. Spread on waxed paper to cool.
