Cod With Lemon-Garlic breadcrumbs


2 slices firm white bread
2 tablespoons margarine
1 garlic clove
4 pieces cod fillet
2 tablespoons fresh lemon juice
3/4 teaspoon salt
parsley sprigs


Preheat oven to 450 oF. In food processor with knife blade attached, process bread until fine crumbs form.

In 10 inch skillet, melt margarine heat. Add garlic, cook until golden. Add bread crumbs and cook, stirring often, until lightly toasted. Remove skillet from heat.

In 13" by 9" glass baking dish, arrange scrod fillets; sprinkle with lemon juice and salt. Press bread-crumb mixture onto tops of fillets. Bake cod 10 to 15 minutes, until fish is opaque throughout.

To serve, arrange fish on platter; serve with lemon wedges, if you like, and garnish with parsley sprigs.
