Zucchini, Yogurt- Quiche

This is a great Quiche, to eat accompanied by a salad of arugula and parmesan, or green leaves. And as dish is quite complete in calories and fat, for the Christmas Day lunch.

INGREDIENTS

2 zucchini 2 onions a pinch of salt pinch of freshly ground pepper 2 cup yogurt tasteless, and no sugar 3 eggs 3 or 4 tbsp. grated Parmesan cheese 1/2 red bell peppers 1/2 yellow bell pepper 1/2 orange bell pepper 3 tbsp. oil 1 tbsp. of finely chopped fresh parsley. 1 tsp. oregano 1 sheet of puff pastry dough or purchased ready-made.
