Sweet Potato Casserole

This is a family favorite. A touch of sweet to the holiday meal. If your family likes coconut, you can add a small can to the sweet potato mixture.




3 to 4 sweet potatos (baked and mashed) or 1 lg can sweet potatos, drained and mashed 2 eggs, well beaten 1 Teaspoon vanilla 1 teaspoon cinnamon ½ cup butter Topping: 1 cup brown sugar, firmly packed ½ cup flour ½ cup butter, softened ½ cup chopped pecans

Mix all ingredients for casserole together and pour into a buttered, oven proof casserole dish For topping: Mix brown sugar and flower together, cut in butter until mixture is crumbly and add nuts. Sprinkle over casserole Bake at 350 degrees for approximately 30 minutes.
