Italian Chicken Casserole


1/8 tsp salt, to taste 
4 boneless, skinless chicken breast halves
1 cup long-grain rice
1/2 cup grated Parmesan cheese
1-3/4 cups canned whole tomatoes, undrained and chopped
1 tbsp Italian seasoning
1/2 cup onion, chopped
1/8 tsp pepper, to taste
1 tsp olive oil
1-1/2 cups chicken stock
1 clove garlic, crushed
1/2 cup shredded low fat mozzarella cheese

Preheat oven to 375°F. Combine first 8 ingredients and half the Italian seasoning in an ovenproof casserole coated with oil, and mix thoroughly. Arrange chicken over rice mixture. Sprinkle with Parmesan and remaining Italian seasoning. Cover and bake 45 minutes. Uncover casserole and {Bold bake} another 10-15 minutes, or until liquid is absorbed.
