1 cup softened unsalted butter ½ cup powdered sugar 1 teaspoon. vanilla extract 1 teaspoon. coconut extract 2½ cups flour ½ teaspoon. salt 1 cup of lightly toasted sweetened flaked coconut. 1⅔ cups powdered sugar
beat butter at medium speed with mixer until creamy. gradually add ½ cup powdered sugar and extracts, beating well. add flour and salt, beating until combined. stir in coconut and cover and chill dough for 30 mins. shape dough into 1" balls, placing about 1" apart on parchment line baking sheet pan. bake at 350 for 15 to 20 mins. until golden brown on bottoms. tops will appear pale in color. place cookies on racks to cool about 5 mins. then roll cookies in powdered sugar.
